hi lovelies~ so today i made some cupcakes to celebrate not only the end of my exams, but also my boyfriend's brother's seventeenth birthday!! it's so crazy! last year i made him s'mores cupcakes, so i figured i'd go with another childhood dessert theme and go with worms and dirt! (i really hope you guys also had this in your childhood, otherwise you missed out!)
it's fairly simple; it's just gummy worms submerged in vanilla ice cream and crushed oreo crumbs! but, since i wanted to bake for him for his present, ice cream wouldn't do!
so i baked him this brownie-licious cupcake!
so, i don't remember where exactly i got this recipe, so i'm going to give it to you guys here, with the directions so you can make it yourselves! it's very simple! i make all of my baked goods from scratch! so no cake mix or anything!
** WARNING :: THIS IS A VERY MESSY RECIPE!! **
♡ red velvet brownie ♡
1/2 cup butter
2-oz dark chocolate, coarsely chopped
1 cup sugar
2 large eggs
1 tsp vanilla extract
1/2 tsp red food colouring
2/3 cup all purpose flour
1/4 tsp salt
preheat oven to 350 degrees F (175 degrees C)
in a small, heatproof bowl, melt butter and chocolate together. stir with a fork until very smooth. set aside to cool for a few minutes.
in a large bowl, whisk together sugar, eggs, vanilla extract and red food coloring. add in the chocolate mixture and stir until smooth. batter should be red. If a brighter red is desired, add an additional 1/2 tsp food coloring. add flour and salt into the bowl and stir until everything is just combined and no streaks of dry ingredients remain.
bake 20 minutes in the preheated oven, or until toothpick inserted into cake comes out clean. cool for 10 minutes in the pans, then remove from pans and cool completely.
for the icing, you can use any buttercream icing recipe on the internet! just bake sure it's very smooth and fluffy! c: i used a lot of icing sugar in mine! then you can either crush a pack of oreo cookies or you can buy the pre-packaged oreo crumbs! i started by putting my worms and wedging them into the icing and then essentially dumped a handful of crumbs on top of it!
