♡ recipe: kawaii peanutbutter cookie ice cream sandwiches ♡




hello every one~ today i will be sharing a recipe of mine! my boyfriend went away for the weekend to perform because his band was nominated for some music awards for best break out band of twenty thirteen and fan favourite! i usually bake on the road goodies, but because i've been so ill and busy, i was unable to actually make him anything in time for him to take on the road. nevertheless, i decided to bake him celebratory treats for his return!

so today i will teach you how to make simple home made kawaii peanut butter cookie ice cream sandwiches! (boy that's a mouthful!)

for the cookie:
1 cups all-purpose flour
1 teaspoons baking powder
2 teaspoons baking soda
2 sticks of butter (room temperature)
1/2 cup creamy / whipped peanut butter (i use the kraft teddy bear kind!)
1/2 cup granulated sugar
1/2 cup firmly packed light brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 cups quick-cooking oats 
for the filling:
1 stick of butter (room temperature)
1/2 cup creamy peanut butter
1 2/3 cups confectioners’ sugar
for the icing:
4 cubes white bakers chocolate squares
sprinkles
halloween candy (m&ms, smarties, fuzzy peaches, sour patch kids, mini chocolates, etc.) OR little chopped up pieces of fruit!


preheat oven to 350 degrees.

to make the cookies, in a small or medium bowl, combine the flour, baking powder and baking soda; use a whisk to combine, set aside. using a mixer or pure arm strength like me, cream together the butter and peanut butter in a large bowl. add sugars and beat at medium speed for 4 minutes, scraping down bowl twice.

at low speed, add eggs and vanilla. add flour mixture and beat at low speed until well mixed, frequently scraping down bowl. add oats, and mix well.

using a small scoop, place balls of dough on parchment-lined baking sheets. form into tear drop balls (or regular balls if you just want normal sandwiches). bake until cookies have spread and turned very light golden brown, about ten minutes. remove from oven and set aside to cool and firm up, ten to fifteen minutes. when it's cool, you can put the cookies in the fridge to cool some more while we make the filling!

filling time! cream together the butter, peanut butter and confectioners’ sugar until very smooth. feel free to use more confectioners' sugar if you want it to be uber fluffy and light! you can chill the icing if desired, too, but i like when it's warm and soft as it's easier to work with.

to assemble cookies, just take one cookie and add a tablespoon (literally use a table spoon) of the icing and then pat it down just a little. then take another cookie and place it over the icing and squish it together gently so the icing spreads out.

then melt white chocolate over top of boiling water (or extremely hot water). once it's super smooth, use the spatula to spread the white chocolate over the top of the 'ice cream' and add sprinkles and halloween candy (like m&ms or the sweetheart candies i'm using). you can be super healthy (not like this is a healthy recipe to begin with...) and use little chopped up pieces of fruit if you wanted~





et voila~ sorry for no photos, i only took a few sporadically so it'd be strange to include only some! >.< but the recipe is pretty detailed and easy to understand i think!
