♡ recipe: magical love me vanilla brownies ♡

hello deerlings~ last week i celebrated my two year anniversary with my beautiful baby boy~ like with all big events in my life, i usually do some baking! i found this recipe on youtube all in japanese and decided to translate and adapt the recipe on my own to something that works. i think they turned out well and between my boyfriend, my mama and his family, they were all devoured pretty much the day i made them!

so today's recipe is called the magical love me vanilla brownies based on the fact it was made for my anniversary~ ♡

for the brownie:
3.5 oz white chocolate
3 eggs
4 tablespoons (1/2 stick) softened butter
1/3 cup white sugar
1 tablespoon vanilla extract
1 cup all purpose flour
optional: 1 cup dried cranberries/blueberries or chocolate chips, etc
for the frosting:
2.5 ounces white baker's chocolate
2 tablespoons whipping cream
1/4 cup icing sugar
1 teaspoon vanilla extract
red food colouring

** 2 squares melted white chocolate and sprinkles to decorate

preheat oven to 350 degrees and line the 9x9 inch pan with parchment paper.

melt the chopped white chocolate in a large metal bowl placed over a pan of hot water or microwave. remove from the hot water and mix butter with the remaining heat until smooth.

in a separate medium bowl, beat with an electric mixer the three eggs and sugar until white and fluffy. (if you try by hand, you'll be there for hours)

add in one third of of the fluffy sugar mixture into the chocolate mixture and fold together with spatula and mix well. then add the rest and mix well before adding the vanilla extract!

sift in the one cup of flour and mix well with spatula until combined. ** optional; add in the chocolate chips or fruit pieces! i added in sprinkles so it's like funfetti!

spread the batter in the brownie pan and drop the pan lightly on the counter to raise all the air bubbles out of the batter.

bake for about fifteen minutes until brown along the sides. cover the brownie with aluminum foil and continue to bake for another fifteen minutes. (depending on the heat of the oven, cooking time may differ, so keep checking)

remove the brownie from the pan by lifting the wax paper and place it on a wire rack to cool.


put the chopped white chocolate and whipping cream in a metal bowl. place it over a pan of hot water and melt the chocolate until smooth.

remove from the hot water and mix vanilla extract and icing sugar. then add red food colouring (little at a time) and mix until you reach a nice medium shade of pink.

cut the brownie into sixteen squares and spread the pink frosting. refrigerate to set the frosting and brownies.

zig-zag the white chocolate over the brownies, then finish with sprinkles of your choice.
